Sun-dried tomatoes are ripe tomatoes that have lost most of their water content after spending most of their time drying in the sun. These tomatoes are usually pre-treated with sulfur dioxide or salt before exposure to the sun to improve quality. Typically, tomatoes spend 4-10 days in the sun to complete the sun-drying process.
Cherry tomatoes lose 88% of their original (fresh) weight, while larger tomatoes can lose up to 93% of their weight during the process. As a result, to prepare one kilogram of dried tomatoes, between 8 and 14 kilograms of fresh tomatoes are needed. After the operation, tomato fruits retain their nutritional value, which is rich in lycopene, antioxidants and vitamin C.
Finished products may contain 2-6% salt and can contribute significantly to daily intake. Sun-dried tomatoes can be used in a variety of recipes and come in a variety of shapes, colors, and tomatoes.
Traditionally, they were made from dried red plum tomatoes, but you can buy them in yellow varieties. Sun-dried tomatoes are also available as a paste or puree. Sun-dried tomatoes may also be preserved in olive oil with other ingredients such as rosemary, basil, dried paprika, and garlic.
